Ultimate Reset- YOUR questions, MY answers

The Beachbody Ultimate Reset is a program where you RESET your body to do things it was naturally intended to do.
With our environment and the foods we eat we take on "baggage" that disallows our body to function at it's full capabilities.

Anything in italics is from the Beachbody Ultimate Reset Program & Nutrition Guide.
If it is not italics, it is my answer.
Beachbody Ultimate Reset. To learn more click here.
Please tell us a little bit about yourself. I am 41 years old. I was a teacher for 15 years. I am a wife and a mother of two teenagers. I spent an entire decade (my thirties) over 40 lbs overweight. I am now passionate about health and fitness and teaching my family and friends all about what has worked for me!

What made you decide to do the Beachbody Ultimate Reset?
We recently moved back from spending two years in Beijing, China. After living there I knew I needed to detox with the horrible pollution. The strict meal plan intrigued me about this cleanse. I was not interested in a juice cleanse or anything too dramatic. I liked that it is all natural and healthy eating. I decided this summer would be my "Super Scary Summer Plan" and the UR would be Phase I. Pushing myself to do hard things is something I recently have enjoyed doing.

Did you feel tired? Yes, I felt extremely tired. I have always required a lot of sleep and this just validated that.

Was it emotional? Not any more emotional than I already I am. I am pretty "needy" during the week before my period (which was around day 13-15 on the Reset). My kids might say I was grumpier. I think that was mostly from not exercising.

Did you miss working out? YES! Exercise, for me, is like a daily "Reset" and when I don't do it, my day feels off and I feel as if my hormones and chemicals are all out of whack. For the first couple of days I did walk and do yoga. After that, I really didn't. I really just felt lazy.

Did you lose weight? Yep! I did! Although I really was not doing this for the weight loss, it definitely was in the back of my mind the entire time. I thought I would've lost more weight than I did.

What did you hate about the Ultimate Reset? At first, I HATED the miso soup. Then I learned how to make it better (blending up the seaweed). At first, I HATED the Detox supplement. You drink it three times a day, beginning in phase II. It is brown with lots of floaties in it. But, I quickly got used to it and just downed it. The "green sludge" a.k.a. Alkalinize supplement I drank daily for all 21 days. It is green and just tastes like spinach. That wasn't as bad tasting for me. All in all, the supplements really grow on you and prove that we can do things that are hard if we are just persistent at it.
I learned I would DO A LOT for my health!

What was the hardest part of the Reset? If it was any longer I would say not eating what others around me were eating. For example, I went to a graduation party where there was just a little bit of fruit and no vegetables. There was yummy meat dishes, lots of creamy pasta salads and desserts.  I had eaten my Reset lunch before we went, and intended to eat my Reset dinner when we got home. We ended up staying at the party longer than I thought and I was pretty resentful about the yummy food that was being eaten around me. Then I got home and my dinner was going to take 45 minutes to prepare. So I just had a salad. Situations like this were doable because I was focused for 21 days. Like I said, I don't think I could've done that for even 30 days and been as successful.

Did you learn any tips or tricks to make the Reset easier? PREPARE- Shop ahead of time to insure you have ALL ingredients. Read the next days menu the day before and plan out your prepping.
SHARE- Tell people what you are doing, especially family members. Most dinners I cooked for my family too and just added some more protein to theirs. They really liked the recipes A LOT and it helped me to have their support. I didn't want to feel like I was alone on a desert island. Also, knowing that I was making my nightly Facebook and Instagram posts helped me to be accountable.
WEAR- the bracelet! When I saw the bracelet I thought it was dorky, but I came to rely on it as times got hard. Now I wear it with pride!
SUPPORT- Find and join an Ultimate Reset support group! I can help you find one. This is something you will want to do with others. Your family will not quite understand everything you are going through. I am a "words of affirmation" gal and didn't feel like I was getting that from my hubby, but my fellow Reseters were meeting that need for me!

What did you love about the Ultimate Reset? I loved so many things about this process. First, I love that it is only 21 days! It is the perfect amount of time- not too short that it's easy, but not too long that you are nutso by the end.
I loved pushing myself and challenging myself. Each time I had house guests, went out to a restaurant, went to parties or packed my food and supplements to go I felt a huge boost of confidence and empowerment.
I loved have a pre-planned menu and shopping list. I loved having ALL the ingredients for every single recipe at hand. I loved learning new healthy foods and learning how to cook.
I loved being on a food schedule, with supplements thirty minutes before eating. With the supplements I would drink a full glass of water thirty minutes before eating and I would find that I would not be as hungry when it was time to eat.
I loved being in a support group, with others doing the same exact thing. Each day we would post and comment to each other our struggles, emotions, etc. It was really bonding and strong doing it together!

What did you learn from the Ultimate Reset? I learned SO MANY things from the Reset, I could go on and on. Mostly I learned that I eat usually eat for taste, instead of for health. The amounts I would eat prior to the Reset and what I would choose was ALWAYS based on emotion, rather than smart decisions. I have always wondered what it would be like to be one of those people who just "eat to live". Being on the Reset made me feel that way. I ate what my body needed, no more. I ate the BEST choices for my body, not my taste buds...You know what? IT FELT GREAT! Taking the emotion out of eating was so refreshing and I could really focus my emotions on SO MANY other things that deserved them more. For other things I learned click here

I used to think my body NEEDED sugar, especially on certain days out of the month. I learned that was just my head rationalizing my wants.

Did you go up in weight when you started eating again? I ended the Ultimate Reset four days ago and have maintained my weight loss so far. I definitely did NOT go back to the way I used to eat. I will now eat far less meat and sugar.

Why is Shakeology not allowed on the Ultimate Reset, if it is supposed to be the "healthiest meal of the day"? We encourage you to follow the Beachbody Ultimate Reset meal plan exactly as written. You can, however, drink vegan Shakeology as a healthy, delicious breakfast alternative (phases 1 and 2) or snack option (in all three phases). Because phase 3 calls for less protein, we recommend using only a half serving of vegan Shakeology as a breakfast alternative during phase 3. I didn't get my "rear in gear" soon enough to switch my Shakeology order to vegan in time, so I went without it. I really, really regret that because Chocolate Vegan would've been a fabulous treat to have! Next time...for sure!

Why are you not supposed to workout? It is best not to do any strenuous exercise during the next 3 weeks. When you think about it The Reset is already giving your body a serious internal workout. It's important to allow your nervous system to remain in a relaxed state, and to refrain from asking your body to repair muscle tissue at the same time it's cleaning and releasing toxins. But even though you aren't doing any resistance training, you won't lose muscle or lean body mass during the Reset. Plus you'll soon reap the rewards of an internal system that works more efficiently, and a muscular system that's been allowed to rest, recuperate and recharge.
As I said before, not working out was a challenge for me. However, I did feel achy at time, which justified that it was actually detoxing from my body. This is completely normal and expected.

Would you ever do it again? For sure! Ideally, I would LOVE to do it twice a year. Jan 1st and again in the fall. Two of the people in my support group had done it before and were mentioning that it is easier, mentally, doing it the second time and that you get different things out of it. That was interesting to me. I look forward to doing it again!

What are your favorite recipes? I posted many of my favorite RESET recipes here on the page. Please look under the label "recipes" to find them. Some of my favorites were the salad dressings, Roasted Roots, Roasted beets, Hearty-Vegetable Miso Soup. Jicama-Avocado salad, Coconut kale...there are really so many! I DID NOT like the cucumber-avocado soup.
Here are things that will now be a STAPLE in my house: toasted pumpkin seeds, homemade salad dressings, tempeh, beets, Bragg liquid aminos, rice vinegar, toasted sesame seed oil.

Advice for those considering the Ultimate Reset? Get your Vegan Shakeology ordered in time! Also, you can do this! If I can do it, anyone can. I am someone who used to consider myself a "quitter". With that being said, you will want to do it at a time when you can fully commit to it. There WILL NOT be constant trips to the bathroom, BUT you will be spending more time prepping your foods and your body will need rest. So consider WHEN you will do it. Set yourself up for success by working with a coach who has done the Ultimate Reset. The more support, the better.

Ultimate Reset Day 21 - Last day!

Yep! You see it right...made it to the VERY last day and went OFF TRACK! Why? Well, I simply was being rebellious. I had been determined and dedicated for so long, I just had this part of me that was saying, "I can make my own choices...I am not a robot". Now, this HAD creeped into my mind earlier in the process, but the other part of me saying, "You are dedicated. You are determined. You can do this!" was louder. UNTIL TODAY. Today I was not at an amazing restaurant. Nor was I with out of town guests. I was not at a party with amazing desserts. I was simply in my kitchen and did not want carrot-seaweed salad for lunch! Why didn't I just make a green salad? Yeah, I know!

Am I disappointed in myself? YEP! I am disappointed because my intestines are not crystal clean anymore! I am disappointed because I am a complete perfectionist and that hurts. BUT being healthy is NOT about being perfect, even in a 21 day cleanse.

Anyhow, it over...but not completely! Tomorrow I will weigh in, take post measurement AND my after pics. I am also planning a special Wrap-Up blog post with questions and answers. So if you have one, post it below!
SEE YOU TOMORROW!

Ultimate Reset Day 20

Boy, I never knew that 21 days could go by so slowly! I am getting pretty excited to wrap this baby up and call it a memory! HOWEVER, don't think I will be going right back to the way I was eating...nope, not gonna do it! I have learned WAY too many things about my body and how it reacts to what I eat!

I am planning a VERY SPECIAL blog post, including questions from YOU. If you have a question about this process, post a comment below! I will answer them honestly and keep them confidential.

TOMORROW IS THE LAST DAY!
What do you think I am most excited about?
What do you think I will eat first that I've missed?

Breakfast- Fresh Fruit
( I will definitely be continuing this on after!)

Lunch- Jicama-Avocado Salad
(click here for the most delectable recipe!)

Dinner- Asian stir-fry veggies

Jicama-Avocado Salad

Jicama will definitely be something that has a permanent home behind MY refrigerator door from now on! And who doesn't love avocado? YUM!

Recipe from Beachbody Ultimate Reset
Jicama- Avocado Salad
makes 4 servings

2 tsp. Himalayan salt
4 tsp. pure maple syrup (I used agave)
1/4 C fresh lime juice
1 1/2 Tbsp. extra-virgin olive oil
2 medium avocados, cut into chunks
2 medium jicama, peeled, match-stick sized pieces
1/4 C fresh, chopped cilantro

Combine salt, syrup, juice and olive oil in a bowl and mix well. Combine avocado, jicama and cilantro in a medium bowl. Drizzle with dressing, toss gently to blend. Cover tightly and let marinate in refrigerator for 1 hour or longer before serving.
ENJOY!

Ultimate Reset Day 19

Today I woke up full of energy and dying to run! So I went for a 40 minute run and felt amazing! I have really missed the endorphins! One thing I have really noticed is that it doesn't take much to fill me up anymore. Big a-ha: I usually just eat for taste. This process has been yummy, but has shown me what someone who eats just as fuel feels like. I stop when I am full, rather than eating to get as much as I can.

Breakfast: honeydew, blueberries, kiwi
Lunch: Hearty Vegetable-Miso Soup with salad and toasted pumpkin seeds
Dinner: Roasted beets and baked tempeh
**Two of my very favorite recipes are the soup and beets, so today was a YUMMY day!**

Ultimate Reset Day 18

Every day I am learning something new about myself. Today, it was that I don't like fennel!

Breakfast: blueberries, kiwi, nectarine
Lunch: salad with avocado and cherry tomatoes, baked sweet potato
Dinner: Roasted fennel and steamed asparagus and broccoli

I cooked lasagna and yummy bread for Sunday dinner. Didn't even phase me. I only am tempted if I get hungry. Note to self: don't let myself get hungry!

Ultimate Reset Day 17

Avoiding temptations is getting harder for me as the days go on, not easier. Today was a graduation party. I ate before I went, the salad that I didn't snap a picture of. Unfortunately, they didn't have any veggies so I did overdose on fruit. The big catastrophe was that I brought home cake to freeze for later and I dropped it face down on the sidewalk. BOOO!

However, I don't want to go back to eating garbage. I just want to freedom of the choice. But a success is a success and I count today as one!

Breakfast: fresh berries
Lunch: The "normal" (salad with toasted pumpkin seeds)
Snack: watermelon and pineapple
Dinner: green beans and roasted squash

Ultimate Reset Day 16

Keeping it real and getting personal here!
Last night was the hardest night by far! Not because of being hungry, I was just plain self-pitiful about not being able to eat junk and be healthy. Yesterday I was shopping all day long at two malls. At one point I glanced in a mirror and saw myself as frumpy and flabby. My mind immediately went to self-doubt and criticism and anger. Anger because there were skinny people all around me eating whatever the heck they want and here I am eating seeds and plants and still look the same! IRRATIONAL, for sure! Yes, I completely and utterly and whole-heartedly credit my hormones for this full-fledged pity party!

So what worked for me was to ride the wave of it, WITHOUT JUNK, and hope it passes soon. I did eat a banana with a 1/2 tablespoon of natural peanut butter. Again, it is not hunger at all, it is just the lack of freedom. But you know what, I have had that freedom before and it lead to MUCH MORE unhappiness that a few hours of self-pity once a month!

I have noticed that my fruits are tasting SUPER DUPER sweet. It is because my taste buds are now sensitized to sugar. Again, the meals are satisfying...I get SUPER excited about my toasted pumpkin seeds and yummy homemade dressing! Do you want the recipe for my new favorite dressing?

Missing endorphins from my workouts and have anxiety that I will not be able to bounce back in. I have big plans for exercise after the Reset is over, so nervous about that. Okay, let's get to the food.
Breakfast- half orange, strawberries, half of an apple. I didn't even eat it all.
Lunch- salad with toasted pumpkin seeds.
Dinner- steamed kale with lemon juice and curried cauliflower (hubby ate the cauliflower too).

A great big thank you if you are reading this right now. I know it is tedious for you to follow along and that you don't have to. But I appreciate you being here because it helps me to keep going! So, thank you!

Edamame and Roasted Corn Succotash

Don't want to cook on these hot nights?
This recipe is perfect!
Need a dish to take to a Memorial Day party, Father's Day BBQ or Graduation celebration? Here ya go!
Recipe from Beachbody's Ultimate Reset
Makes 4 servings

2 C fresh corn kernels
4 C water
1 cup shelled edamame
4 Tbsp extra-virgin olive oil
2 medium shallot, diced
2 medium red bell pepper, diced
1 medium red onion, diced
4 Tbsp. rice vinegar
1/2 C fresh lime juice
1/3 C fresh cilantro, chopped
Himalayan salt to taste
ENJOY!

Ultimate Reset Day 15

First day of Phase III! You know what that means? different supplements. No more brown water taken three times a day. TIP: Do that one with cold water and shoot it quickly while you continuously stir it. I should post a video of me doing it, I am sure it is funny. Actually, the taste is NOT bad. The floaties were a little bit of a turn off. Oh, what we endure for our health!

I am having some anxiety actually about finishing. On one hand I want a cheeseburger and ice cream with hot fudge....but on the other hand I don't want it at all because I feel so great and know how UNCLEAN it is. I have learned SO MUCH about the food and how it affects our body functioning properly...I shudder to think of how I was feeding it. Anyhow, not quite sure how I am going to handle "post-reset" phase. Luckily, I have a great support group to help me through!
You will notice grains missing during this last phase.
Breakfast- fresh fruit (yummy peach)
Lunch- Miso soup with carrot and cabbage asian salad (I used collard greens in place of cabbage)
Snack- chia pudding
Dinner- roasted sweet potato and garlic veggies

TOTALLY satisfied today!

Ultimate Reset Day 14

Last day of Phase II
Otherwise known as 2/3 of the way done!
Although I am not excited to finish. More on that later.
I was more hungry than normal today, especially at night.
I ate a much bigger portion of dinner than I should have and still wanted something. Not bad, considering I can count on one hand how many times I've been hungry like that in the last 14 days. And I really believe it is more mind than stomach.
Breakfast- fresh fruit
Snack- green apple with strawberries
Lunch- salad with sautéed zucchini and toasted pumpkin seeds.
Dinner- steamed kale and edamame and roasted corn succotash.

I have noticed odd dreams, more vidid. "They" say it is normal. I guess that means it is working. Until tomorrow.

Hearty Vegetable- Miso Soup

DO NOT let the miso paste or seaweed deter you from making this mouth-watering soup!
It is uber-healthy and my entire family loved it!

Recipe from the Ultimate Reset

Makes 4 servings

4 tsp extra-virgin olive oil
1/2 medium onion, finely chopped
4 cloves garlic, chopped
2 medium carrots, cut into diagonal thin slices
2 medium celery stalk, cut into thin diagonal slices
2 tsp. finely grated peeled ginger

1 C broccoli florets
3/4 C chopped fresh green beens
1 C shredded bok choy

4 Tbsp miso paste, mixed with hot water

Add water; cook at a gently boil on low for 10 minutes or until vegetables are tender. Add broccoli, green beans, bok choy and seaweed; cook, stirring frequently, for 5 to 7 minutes or until tender-crisp. Remove from heat. Add sesame oil, green onion and miso. Mix Well. ENJOY!

Ultimate Reset Day 13

Are you tired of listening to me ramble on and on about the SAME old things day in and day out? If you are, I completely understand! I would be bored too! But I continue to do this for accountability because if I don't, I might waver. AND I continue to do this because I know someone out there will not want to go in blindly when they do the Reset! So...

Day 13 was fun! LOL
I completely messed up my lunch by not having any more beets and I completely messed up my dinner by buying the WRONG squash! For a split second I thought about having a non-UR meal ( made chicken satay with spinach and brown rice for the kids), but instead I made Day 14's dinner and will eat it two nights in a row.

At one point during the afternoon, my 16 year old was eating Nutella and I said to her, "I am going to quit right now"( only half meaning it). She said, "No mom. If you quit you will be teaching me that I can quit things in my life". Wise girl! And later she said, "It is easier to say you are going to quit than actually quit, huh mom?" I thought about that a little bit. I certainly used to NOT think that, but now...yes, why, I think she is right.

Last night I had a church activity with the most delectable looking goodies! A decadent chocolate bundt cake with ooey-gooey frosting, soft homemade chocolate chip cookies and pretzel-rolo-cashew-chocolate yummies...I didn't even tear up passing them by! Before you would've had to peel me away from that table. SHOCKING!
And it gets better...afterwards we went to my FAVE FRO YO shop (total weakness of mine) to celebrate the daughter's BF birthday...again, TOTALLY FINE. Why? I have no flipping clue! Really. I have said it before and I will say it again, this is my "GIVE ME CHOCOLATE OR DIE" week so I am astonished!

Whew...that was a lot to share. Sorry for the yelling. To the food...
Breakfast- smashed seasoned chickpeas, avocado and steamed kale *see my doggie?*
Snack- 10 cashews (CHEAT!)
Lunch- same salad every day...LOVE those toasted pumpkin seeds!
Dinner- Edamame and corn succotash

Almost done with Past II!

Ultimate Reset Day 12

Like most days on the Ultimate Reset there are highs and lows. I woke up all amped and ready to go, but then lost energy as the day went on. Mid morning I was SUPER hungry so I had 10 cashews, total cheat, but at least I chose something on the plan.

Then in the afternoon I was GREAT! I didn't adequately plan for dinner prep, most meals take about a half hour, but this one took longer. I was not famished and even had no problem with serving the kids homemade tostadas. I enjoyed the smell, but not tempted to even have a bite. Likewise with my daughter making wonderful chocolate chip cookies for her BF's birthday. Not one crumb.

This is REALLY making me think about cravings and how I sued to succumb to them, using "craving" as permission or an excuse. Are cravings REALLY cravings from our body?
Or are they our mind suggesting something we might like?
Hmmmmmm....anyhow, let's get to the food!

Have you ever fantasized having a personal chef that only cooks EXACTLY what YOU need to be healthy? I have had that fantasy more than once! Day 12's dinner, most of the meals actually, feels JUST LIKE THAT, except I AM the chef!
Breakfast- fresh fruit plate (strawberries, half orange, honeydew)
Snack- 10 cashews
Lunch- Salad with cucumber, tomato, toasted pumpkin seeds and hearty vegetable miso soup (recipe to follow. SO GOOD!)
Dinner- millet, coconut collard greens, Mediterranean roasted beets. (Recipes to follow...both the greens and beets will be a staple in my future menus).
HOW DO YOU DEAL WITH CRAVINGS?
Give in or hunker down?

Ultimate Reset Day 11

Video is back! Enjoy!
Halfway point...it has been easier than I thought it would be. Yes, there are difficult times, but they are over quickly, thank goodness!

Breakfast- fresh strawberries and honeydew melon
Lunch- quinoa and lentils with cucumber & tomato salad
Dinner- quinoa, steamed swiss chard with hearty vegetable miso soup.

Sweet Potato and Roasted Red Pepper Bisque

This recipe is from the Ultimate Reset
This soup is quick, easy, healthy and tastes SO YUM! My hubby and my daughter both tried it separately and said the exact same comment, "This tastes like pizza!" So, I guess, it tastes like pizza! It is filling, which I really like in a soup!

Sweet Potato and Roasted Red Pepper Bisque

(makes 4 servings)
4 C water
4 medium sweet potatoes (or yams), peeled and cubed
1 medium red bell pepper, sliced
4 tsp. finely grated ginger root
5 tsp extra-virgin olive oil
8 tsp miso paste, mixed with hot water
4 C vegetable broth
Himalayan salt (or Bragg Liquid Aminos) to taste

Bring water to a boil in a saucepan over medium heat, add sweet potato and cook for 7 to 7 min. Drain and set aside. Roast red bell pepper on grill, gas stove top or a George Foreman. Turn frequently until skin is evenly charred.
Place ingredients in a blender or food processor. Blend until smooth. Heat soup in a medium saucepan over medium heat, cook, stirring frequently, for 4 to 5 minutes, or until hot. Add seasonings to desired taste.
ENJOY!

Ultimate Reset Day 10

Day 10 ended difficult, but started out strong.
Today was Saturday, of Mother's Day weekend. I knew the day was going to be mostly out of the house, which means less control. So, I packed all my food and supplements to go in a large cooler bag. I was feeling strong and empowered! And I stuck to it! But, we took my Mother-In-Law to dinner for Mother's Day and it.was.hard. I did not care for the quinoa-lentil salad much and everyone's food looked SO GOOD. I actually got very, very grouchy and ticked off about the whole thing. At one point, I was telling myself in my head, "Why do I even have to be healthy? We all die anyway."...Yeah, crazy, right?

BUT, the point is, is I stuck to it despite my crazy talk! What is driving me now? It is NOT about weight loss. It is NOT even about cleansing anymore. It is ALL about NOT GIVING UP now after making it SO far!
Have you ever pushed yourself farther than you thought you could? I would love to hear about it, to help me continue to persevere.
Breakfast- smashed chickpeas with evoo, garlic and lemon juice.
Lunch- salad with cucumbers, carrot and kalamata olives.
Dinner- steamed broccoli with quinoa-lentil blend.

Ultimate Reset Day 9

No video for today! Sorry...by the time I remembered I was tucked in bed and was too tired to get up, get dressed and put on lipgloss...so here you have me typing.

Day 9 was a hungry day. Not sure if it was the all-fruit breakfast, but by 10:00am I was wanting lunch. Then, again, at night around 9pm I was hungry. I did not eat anything extra though! I am focused. A little anxious about all the temptation in the upcoming weekend, as it is Mother's Day and lots of busy-ness. I know I can be strong, just dreading being strong. Ya know what I mean?

Drinking Detox three times a day is just making me think how much I really love my body. Don't love the detox or the Alkalinize, but I am doing it and it, really, is not so bad. Just another step of proving to myself that I Can Do Hard Things!

The soup at dinner tonight was pure heaven! Everyone time I make something that is "restaurant tasting" I just boost my confidence a little bit more. I am really going to miss that when this is over. Yep, I could continue on to find clean recipes...but there is just something different about wanting to and having to.
Tomorrow is Day 10, milestone!

Breakfast- fresh fruit (raspberries, strawberries, cantaloupe and honeydew)
Lunch- salad with cucumber, red bell pepper and toasted pumpkin seeds and rice and pinto beans.
Snack- raspberries and green apple
Dinner- Sweet Potatoe and Roasted Red Pepper soup with grilled asparagus and slivered almonds.

Friday, May 9, 2014

Ultimate Reset Day 8

Breakfast- fresh fruit (cantaloupe, honeydew melon, apple)
Lunch- Microgreen salad with cucumber, tomato, avocado, toasted pumpkin seeds with homemade creamy garlic dressing.
Snack- green apple with raspberries
Dinner- zucchini and string beans, rice and pinto beans
